Well, what better time to share a recipe that doesn’t need flour, sugar OR butter. Just some good old pantry staples. The world is a pretty scary & overwhelming place right now (especially when you can’t find flour), so my advise is to bake away the worry!

These cookies are SO easy and SO delicious, and they’re pretty healthy too. They have a lovely gooey texture and can be ready in less than 20 minutes. The perfect quick sweet fix right now!

INGREDIENTS
220g medjool dates, pitted (or dried normal dates are fine)
3 heaped tbsp peanut butter, I use crunchy but whatever you prefer
1 egg
1tsp vanilla extract
50g dark chocolate, melted (optional)
⁃ Preheat your oven to 180C and line a baking tray with baking parchment.
⁃ Simply put all the ingredients (minus the chocolate if you’re using) into a food processor (blender will be just fine if you don’t have one) and blitz together until everything is broken down, combined and a ball begins to form naturally.
⁃ Roll into roughly 12 balls, then using a fork press down width then length ways to create the cross on top.
⁃ Bake in oven for 12 minutes, set a timer as it’s important not to over bake them to keep a lovely gooey texture. Let sit cool. If you’re not using the chocolate stop there.
⁃ Melt the dark chocolate in a bowl over boiling water, then once the cookies have cooled dip half of them in the chocolate, any drizzle any leftover at the end over them all.
⁃ Leave for about an hour for the chocolate to harden and then enjoy!
