Well, I love cookies. And I love peanut butter, and I love white chocolate. So for me these are a winner! The sweet white chocolate with salty peanut nuts in a deliciously chewy cookies is just a winner for me. And I’m hoping for you too!

They’re really easy to make, and you don’t even have to wait for them to cool down before you eat them SOO what’s not to love?!

Be sure to bang your cookie tray on a surface half way through baking them and again when they’re done baking. This is the KEY to getting that delicious chewy middle and crispier edges. Doing this deflates the cookie where the baking soda has made it rise and gives you the best textured cookie.

INGREDIENTS
225g butter, softened
160g dark brown sugar
50g caster sugar
110g peanut butter
1 egg
100g white chocolate chips
225g plain flour
1/2 teaspoon bicarbonate of soda
⁃ preheat oven to 180C fan and line 2 baking trays with baking parchment.
⁃ Cream together the butter and sugars until light and fluffy with no lumps, don’t worry if this takes a while, it’s worth it to get it lovely and smooth.
⁃ Beat in the egg, and then mix through the peanut butter. Add the flour and baking soda until combined and the dough is formed. It will be quite a soft dough but that’s ok, you want that! Lastly stir through the chocolate chips.
⁃ Roll 1tbsp of the dough per cookie into a ball and then slightly flatten it and place on the tray. Put in the preheated oven and bake for 12 minutes in total, the key is not to over bake them, they will continue cooking once removed from the oven.
⁃ After 6 minutes in the oven, take the tray out of the oven and bang it a few times on the counter. Do the same again once the cookies have finished baking. Leave to cool for a few minutes then enjoy! (Still slightly warm is most delicious)
