This is the perfect summer bake. The weather has been soooooo hot here in the UK recently and this loaf cake makes the perfect summer tea time treat. It’s light, fresh, delicate and everything a summer time dessert should be.

It’s a light, airy sponge spiked with lemon juice, zest and mixed berries that just taste like summer and add the perfect freshness to a classic sponge. The crunchy sugar topping creates a contrast to the soft sponge and also adds a sweetness that helps to lift the tart berries and lemons. THEN adding a sweet citrusy glaze from white chocolate and more lemons I MEANNNNN, so good. There’s so many different textures and flavours going on and it’s such a good time.
It’s really easy to make and whoever you’re serving this to is going to love it. My MUM says its of the most delicious cakes she’s had and she can be a pretty tough customer, so I must have done something right.

INGREDIENTS
- 225g butter, softened
- 225g caster sugar
- 225g self-raising flour
- 1tsp baking powder
- 1tsp bicarbonate soda
- 3 eggs
- Juice 1 lemon
- Zest of 2 lemons
- 100g mixed berries, I used frozen but fresh is fine too
GLAZE
- 75g white chocolate, melted
- Juice 2 lemons
- 2tbsp icing sugar
METHOD
- Preheat your oven to 180C fan & grease a loaf tin well.
- Cream together the butter and sugar until lighter in colour, then beat the eggs in one at a time ensuring they’re fully combined each time. Mix through the flour, baking powder & bicarb, lemon juice, zest and berries until evenly distributed and the mix is fully combined.
- Pour the mix into the loaf tin and smooth out evenly, then cover with a light layer of caster sugar and bake for 35-40 minutes until rises and golden.
- Once baked set aside to cool and make the glaze. Simply whisk together the chocolate, lemon juice and icing sugar until smooth, then once the cake is pretty much cooled pour over the top. It’s very sticky, so a good idea to have the cake sitting over some baking parchment or foil that you can just throw away after.
- Then slice and enjoy!
