Apparently all people want to be doing during lockdown is baking with bananas, so here is yet ANOTHER recipe that uses up your ripe bananas.

These Banana & Chocolate Chunk snack bars are a delicious, healthier alternative to banana bread and they’re even easier to make. You can knock these guys out in under an hour from start to finish baking.

They’re free from gluten and dairy and use very little sugar as the bananas give such a nice natural sweetness. They’re chewy, sweet, oaty and make such a satisfying but slightly healthier sweet snack! I hope you love them!

INGREDIENTS
- 100g coconut oil, melted
- 100g soft brown sugar
- 1 egg
- 100g oats
- 75g gluten free flour of choice
- 1tsp baking powder
- 2 very ripe bananas, mashed
- 50g chocolate chunks (optional)
METHOD
- Preheat your oven to 180C fan and grease a baking tin well.
- Cream together the coconut oil and sugar until smooth and combined then beat in the egg, followed by the bananas. Stir through the oats, flour, baking powder until you have a smooth even batter, then stir in the chocolate chunks.
- Pour into the prepared tin and bake for 20-25 minutes until golden and feels firm-ish to touch. Leave to cool before slicing and then store in an air tight container.
