These cookies are so good. I made them on the first gloomy, rainy, grey day we’ve had here in the UK after week of gorgeous sunshine and they made my day soooo cosy and delicious so it helped ease the blow of loosing the glorious weather.

They are so chewy. So soft, gooey AND chewy. I love anything with oats in but oat cookies will always be one of my favourites. The texture is just so good, they spread out a lot in the oven so go pretty think which makes them chewy I the middle but a little crunchy on the outside.
White chocolate & orange is also such a dreamy combination. Sweet but also with a hit of citrus and freshness so it’s not overwhelming.

They are so quick and easy to make, and now the weather has gotten a little gloomy it’s the perfect time to get baking!

INGREDIENTS
- 100g butter, softened
- 100g soft brown sugar
- 100g caster sugar
- 1 egg
- 1 mashed banana
- 1tsp vanilla extract
- Zest & juice of 1 orange
- 100g plan flour
- 200g oats
- 1tsp bicarbonate soda
- 100g white chocolate chips
- Pinch salt
METHOD
- Preheat oven to 180C fan & line a two baking trays with baking parchment.
- Cream together the butter and sugars until pale and fluffy, then beat in the egg, banana, vanilla, orange zest & juice and mix together until well combined.
- Stir in the flour, oats, bicarb, white chocolate chips and a pinch of sea salt until all is fully combined and you have a wet cookie dough texture.
- Take 1tbsp of the mix at a time, shape into a rough ball and place onto the lined baking sheet. Bake for 12-15 minutes, once they have fully baked, give the trays a bang on the counter to deflate the cookies slightly, this will make them even chewier.
- Leave to cool slightly, then enjoy!
