This is such a quick, easy one pan recipe that is SO delicious. It makes for the perfect weeknight comfort food dinner as it’s really easy to prepare but is sure to satisfy.

I say Cuban inspired lightly because it’s far from traditional, but garlic, cumin and oregano ARE traditional Cuban spices and this dish features all three of them. But other than that, it’s delicious comfort food down to a tee – cheesy, wholesome and warming.

I love anything that’s one pan, not just because it makes washing and tidying up easier, but also because cooking shouldn’t feel like a chore. And I understand that not everyone gets pleasure from slogging away for hours creating something like I do. So, this is a really quick, easy recipe that anyone can do. INGREDIENTS
- 1 white onion, finely chopped
- 2 peppers, chopped
- 4 cloves garlic, minced or finely chopped
- 1tsp cumin
- 1tsp oregano
- 1tsp smoked paprika
- 1tsp ground coriander
- 1tbsp tomato puree
- 450g chicken, cut into chunks
- 1 tin tinned tomatoes
- 40g grated cheddar
- 20g grated parmesan
- 1 avocado to serve (optional)
METHOD
- Preheat oven to 200C fan. Heat a good drizzle of olive oil (around 2tbsp) into a large pan over a medium heat, add the onion and fry until just browning, about 5 minutes. Add the peppers, garlic, spices and tomato puree, stir all together well and then add the chicken and cook until browned all over. Then add the tin of chopped tomatoes and refill the tin with water and add this and another half tin too the pan also. Mix together well and bring to a gentle simmer, then bake in the oven for 15 minutes.
- Remove from the oven and add the grated cheese over the top, place back in the oven for a further 10 minutes so the cheese has completed melted into the dish.
- It will be pipping hot so be careful when serving, but enjoy! It’s delicious with a little avocado.
