Weekends call for something indulgent, right?

These blondies could not be easier to make, it’s all in one bowl, pretty much an all in one recipe and then you just bang it in the oven, let it the oven do the work for you and you have something so delicious. But, most importantly, they’re delicious. Doughy, gooey, peanutty, chocolatey – all the things you want from a dessert basically.

As you’ve probably gathered, I’m a big fan of chocolate and peanut butter. The sweet and salty combination is just divine.

INGREDIENTS
- 225g butter, softened
- 200g soft light brown sugar
- 100g caster sugar
- 3 eggs
- 2tbsp peanut butter (I like crunchy but you do you)
- 2tsp vanilla
- 1tsp baking powder
- 180g plain flour
- 100g milk chocolate chunks
- 50g dark chocolate chunks
METHOD
- Preheat your oven to 180C fan and line a baking tray with parchment paper. Cream together the butter and sugars until really smooth and it has become paler in colour, then beat the eggs in one at a time, ensuring each egg is fully combined before another addition, until the batter is beautifully smooth and fluffy. Now mix through the peanut butter and vanilla.
- Fold through the flour and baking powder so it’s fully combined with no lumps, then stir through the chocolate chunks so they are evenly distributed. Pour the mix into the prepared baking sheet and level out, then if you fancy putting a few extra chocolate chunks on the top then go for it. Bake for 40-45 minutes until risen, golden and feels pretty much firm to touch but still with a little give. If after 30 minutes you think it’s getting too brown on top, cover it with silver foil for the remainder of baking.
- Allow to cool before cutting, then I like to drizzle them with a little melted chocolate and peanut butter because I can’t get enough and any excuse to make things more pretty, right? But you don’t have to, they’re delicious with or without! Enjoy!
