A baked good for breakfast you say? I’m down.

I love both flapjacks & granola more than most people, so this bake basically joins both those forces and creates the dreamiest breakfast bar that’s chewy, oaty, fruity and so easy to make. They are kind of like an oaty biscuit but with the gooeyness and texture of a flapjack.

You can make them from start to finish in less than 40 minutes, the perfect bake to knock out on a Sunday to then have for your breakfast throughout the week. They are great to make in advance if you’re busy, on the go and need something you can have quickly, or equally great to enjoy leisurely with your morning cuppa whatever. The oats and nuts will keep you full up and satisfied, and they also make for a great afternoon snack.

They are best stored in an air tight container and will keep for up to a week. This recipe makes 9 big breakfast bars.

INGREDIENTS
- 100g butter, softened
- 150g soft brown sugar
- 1 egg
- 200g porridge oats
- 2tbsp golden syrup
- 100g mixed dried fruit
- 50g mixed nuts, chopped
METHOD
- Preheat oven to 190C fan and line a baking tray with baking paper. Cream together the butter and sugar until fluffy then beat in the egg so combined. Stir through the oats and syrup so you have a flapjack style dough, then add the fruit and nuts and mix until evenly distributed.
- Pour the mix into the prepared baking tin and spread into an even layer, making sure to push it into all the corners. Bake for 22-25 minutes until golden brown but still a little soft in the middle.
- Allow to cool completely before cutting. Best kept in an air tight container and they will keep for up to a week.
