I take toasties VERY seriously.
A cheese toastie is probably one of my favourite things to eat – you cannot go wrong with bread and cheese. When I was a kid I would eat about 3 things (nightmare to feed, sorry mum) just a toastie was one of them. So this is a very nostalgic recipe for me.

You may think this isn’t much of a recipe but I can assure you there is an art and skill to the perfect toastie, and I feel like I’m getting there with mine. Get rid of those “toastie machines” for a start, a hot buttery pan is the only way to go.

Camembert is one of my favourite things about Christmas and I find any excuse to include it in a recipe. Creamy camembert with tart cranberries is just the most dreamy festive combination. This is the perfect quick easy lunch or dinner recipe for December and I promise you will love it!


Ingredients: (serves 2 people)
4 slices of bread of your choice (ideally something fresh, and with a bit of a crust on)
½ Camembert, cut into slices
1tsp cranberry sauce
Handful of dried cranberries (optional)
Method:
- Butter both sides of your bread, and heat a large knob of butter in a pan on a medium heat.
- Layer the bread with the camembert and half a tsp of the cranberry sauce per toastie, then scatter with a few dried cranberries and layer the bread together. Plan into the pan and squish the top piece of bread down to make it more compact. Fry for about 3-4 minutes on each side until beautifully golden and the cheese is melting. Keep pressing the bread together throughout. Cut and enjoy!
