Almond Sponge Loaf Cake with a Coconut Buttercream Frosting

Boyyyyyy is this a good one. This cake is probably my favourite flavour combination I have come up with in a WHILE. The moist, rich almond sponge topped with a creamy coconut buttercream, top it off with some desiccated coconut for a little texture and it’s officially heaven.

It may not be the most traditional cake but I promise anyone would love it, it just works. And it’s nice to mix things up a little too.

I love loaf cakes because they’re SO much easier when it comes to decorating. Don’t get me wrong, I love to spend time going all out and making things pretty every now and then (when I have the time), but sometimes you just want to whack a layer of frosting on top and let it be, which is exactly what a loaf cake lets you do.

It’s delicious, easy to make, and a little bit different.

Ingredients:

Almond Loaf Cake:

180g unsalted butter, softened

180g caster sugar

2 eggs

175g self raising flour

50g ground almonds

1tsp baking powder

2tbsp almond extract \ essence

Coconut Buttercream Frosting:

100g butter, softened

300g icing sugar

2tbsp coconut extract \ essence

50g desiccated coconut

Method:

  1. Preheat your oven to 180 fan and grease and line a loaf tin with baking parchment.
  2. Start by creaming the butter and sugar together until fluffy and paler in colour, then beat the eggs in one at a time until fully combined, followed by the almond extract. Fold through the flour, baking powder & ground almonds until the batter is fully incorporated.
  3. Pour the mix into the loaf tin and bake for about 40 minutes until risen and golden, with a slight bounce back when poked.
  4. While baking, make your frosting by beating the butter until its paler in colour, then gradually add in the icing sugar until the frosting has formed. Stir through the coconut extract and desiccated so fully combined.
  5. Allow the cake to cool COMPLETELY before spreading with the frosting. Slice, and enjoy!
