Lemon. Drizzle. Doughnuts

WHO DOESN’T LOVE DOUGHNUTS?! Or lemon drizzle cake for that matter. Combine the two, and you get these little bites of heaven.

Now these are much more of a “cakey” doughnut than a “doughy” doughnut. Does that make sense? Lol. Basically, I made these with a sponge mix as opposed to a dough mix that has yeast, needs kneading and time to prove etc. Which is GREAT NEWS for you guys cos it’s so much easier and quicker!

Think a fluffy, light doughnut, with a lemon drizzle crunchy glaze on top. SO GOOD.

They are a really similar technique to a lemon drizzle cake, just more of a doughnut mix and baked in a doughnut tin (alternative to this below if you don’t have a boujie doughnut tin).

(If you don’t have a doughnut tin, don’t you fret, bake them in a traditional cup cake tin, just only fill the moulds to about a 1\4 full, then cut the holes out post baking. OR, place something round and bake-able into each cupcake mould and let the batter bake around it).

Ingredients:

Doughnuts:

200g unsalted butter

200g caster sugar

2 eggs

250g self raising flour

1tsp baking powder

Juice & zest of 1 lemon

Glaze:

Juice of 2 lemons

4tbsp granulated sugar

Method:

  • Preheat your oven to 180C and grease your doughnut tin (or cupcake tin if you’re doing the alternative method).
  • Start by beating your butter until it’s paler in colour, then add the caster sugar until it’s smooth. Add in the eggs one at a time, ensuring they are fully incorporated after each addition. Beat until the mix is really aerated.
  • Fold through the flour, baking powder, lemon juice and zest then fill each mould equally. Bake in the oven for about 20 minutes, until risen and golden.
  • While the doughnuts are baking, mix together the lemon juice and sugar for the glaze and set aside.
  • Remove the doughnuts from the oven and while STILL HOT pour the glaze over each doughnut. Let them cool, remove from the tins and then ENJOY!
