Now that summer is upon us (well, it SHOULD BE, even though the weather is MISERABLE in the UK), I wanted to create a delicious, summery inspired cookie.

To me, fruity\zesty flavours are always best in summer. When we are in the autumn & winter months I always want all the chocolate, caramel, pumpkin, winter spice vibes in the bakes, but when we’re in the (SUPPOSEDLY) warmer months, I want fruity, zesty flavours.

These cookies are the perfect balance of sweet & zesty, with a crunchy savoury hit from the poppy seeds. I love a classic lemon & poppy seed cake so these cookies are such a winner for me.

They´re so easy to make and take no time at all to sling together. If you fancy a quick, easy weekend treat that’s not toooooo sweet but will definitely curb any cravings, these are for you!

This recipe will give you 10 cookies that will keep for up to a week in an air tight container.
INGREDIENTS
- 100g unsalted butter, softened
- 50g soft light brown sugar
- 75g caster sugar
- 1 egg
- 1\4 tsp salt
- 200g self raising flour
- 1\2 tsp bicarbonate soda
- zest of 2 lemons
- juice of 1 lemon
- 3tbsp poppy seeds
METHOD
- Pre heat your oven to 190 fan and line two baking trays with baking paper.
- Start by beating together the butter until it’s paler in colour and fluffy, then add in your sugars and beat until fully combined and smooth, it should also go paler in colour. Beat in the egg until fully combined, then stir in the lemon juice and zest.
- Stir through the salt, flour and bicarb until a dough forms, then stir through the poppy seeds until evenly distributed.
- Take 1 tbsp of the dough at a time and roll into balls, then place 5 on each baking tray to allow enough room for them to spread out during baking.
- Bake in the oven for 6 minutes, then remove the trays and bang them on a surface to deflate slightly, (this is what will make your cookies suuuuuuper chewy) then put back in the oven and bake for another 4 minutes. Remove from the oven, give them another little tap, allow to cool and then DEVOUR.
