As if brownies weren’t already great enough, add white chocolate and malt powder and they are A.MAZING.

I made these on a rainy Sunday evening, they only took one recipe test which is rare (I guess when you mix chocolate, malt and brownie mix together you can’t really go wrong) and they just made the perfect indulgent treat.

I really love malt powder. It reminds me so much of skiing trips in Switzerland. The subtle, nutty flavour and natural sweetness that malt brings to bakes goes perfectly with brownies, and the texture when baked also adds extra gooey-chewy vibes and I mean, what could be a more perfect addition to a brownie?

This recipe makes 12 brownies that will keep for up to a week in an air tight container.
INGREDIENTS
- 250g unsalted butter
- 250g dark chocolate
- 3 eggs
- 200g caster sugar
- 175g plain flour
- 1tbsp cocoa powder
- 3 heaped tbsp malt powder (Horlicks, Ovaltine etc)
- 100g white chocolate, cut into chunks
- Pinch of sea salt
METHOD
- Preheat your oven to 160 fan. Grease a baking tin and line with baking parchment (the one I use for this recipe is approximately 33 x 23 x 5½cm / 13 x 9 x 2¼ inches)
- Start by melting the butter and dark chocolate together gently over a bain-marie. Once fully melted, add to a stand mixer (or electric or just a hand whisk, whatever you got) and beat together with the sugar until a smooth mix forms.
- Whisk the eggs together in a separate bowl until it’s bubbling\frothy on the top. Make sure the chocolate mix isn’t too hot (keep mixing to cool it down if it is) then pour in the eggs and beat together until smooth.
- Fold through the flour, cocoa powder and malt powder until fully combined, then stir through the white chocolate & sea salt so evenly distributed. Pour the mix into the baking tray.
- Bake in the centre of the oven for approximately 35 minutes, the brownies may look \ feel slightly under baked but they will continue to cook while they cool. Allow to cool completely before slicing and enjoying!
