DAY 4 🎄 Clementine Drizzle

This is a festive recipe that honestly everyone will enjoy, and anyone can bake!

Who doesn’t like a classic lemon drizzle? Soft fluffy sponge topped with a crunchy sugar topping, what’s not too love? Citrus fruits always go so well in cakes as they cut through the sweetness so well and add a lovely light, freshness.

But, now I bring you, a FESTIVE drizzle. You’re welcome.  

Clementine’s are in all the supermarkets this time of year and they are so delicious, so fragrant and so festive. I always bake with them LOADS at this time of year because they go so well in pretty much anything, but this Clementine Drizzle is a real winner. It’s a perfect fluffy sponge, flavoured with clementine zest and juice, then topped with the classic drizzle topping of crunchy sugar but only flavoured with clementine again.

It’s so festive, so delicious and SO easy to make. It will take you no time at all is the perfect accompaniment for afternoon cuppa’s in December. Trust me, this is a great one!

Ingredients

175g butter, softened  

175g caster sugar  

3 eggs  

175g plain flour  

1tsp baking powder  

Zest of 4 clementine’s  

Juice of 2 clementine’s  

Topping

50g granulated sugar

Juice of 2 clementine’s  

Method

  • Pre-heat your oven to 170 fan.
  • Cream together the butter and sugar until fluffy and paler in colour. Then beat the eggs in one at a time, making sure the eggs are fully incorporated each time. Then fold through the flour and baking powder until you have a smooth silky cake mixture.
  • Stir through the zest and juice of the clementine’s so fully combined then pour into the cake tin and bake for 35-40 minutes. Check after about 25 minutes and if the top looks like it’s browning too much, cover with tin foil for the remainder of baking.
  • Mix together the granulated sugar and clementine juice. While the cake is still warm out of the oven, pour the sugar mix over the top of the cake. Leave to cool.
  • Once cool, slice and enjoy! I like to grate a little more clementine zest over too!
