Carrot & Walnut Cake with Cream Cheese Frosting

Big claim… but this is my favourite cake, ever. Carrot cake has always and will always be the best for me, especially with a good cream cheese frosting, you just can’t beat it.

Now I cannot take credit for this recipe at all. Its from the queen herself and my hero, Mary Berry, from her “Baking Bible” book. I wouldn’t even attempt to do a better one because I don’t think its possible to beat. Like all her recipes it is foolproof. So, get the book and bake the cake!
